It's been increasingly so these days... And some prominent ones in which you'd see much of anime parodies would be Hayate No Gotoku to the recent anime known as Baka To Test To Shokanjuu. A parody of the classic Evangelion has been seen on episode 8 and funny to boot. Hopefully more of such will appear to refresh our minds on older animes not watched for a long time...
